Lemon Ginger Scones

Lemon Ginger Scone Ingredients

  • 1 cup chopped crystallized ginger

  • 2 eggs

  • 1 t. pure vanilla extract

  • 1 t. lemon juice

  • Zest of one lemon

  • 2/3 cup of milk

  • 2 ¾ cups all-purpose flour

  • 1/3 – ½ cup granulated sugar

  • ½ - ¾ t. salt

  • 1 T. baking powder

  • 1 t. ground ginger

  • 1 t. ground cardamom

  • 1/2 c. cold unsalted butter cut into small pieces (optional but recommended)

  • Topping – milk for brushing, ¼ c. turbinado sugar (if you don’t want this topping, you could always add a lemon glaze after the scones are baked)

Recipe Steps

  1. Sift flour, granulated sugar, salt, baking powder, ginger and cardamom together.

  2. Add butter pieces and use hands to pinch into dry ingredients until butter is incorporated as small crumbs.

  3. Add ginger pieces and stir.

  4. Whisk eggs, vanilla, lemon juice, and zest of lemon. Keep whisking as you add the milk. Once blended add to dry ingredients.

  5. Combine until dough holds together and feels doughy.

  6. Line baking sheet with parchment and separate dough into two flat circles about 8” diameter.

  7. Brush with milk and sprinkle generously with turbinado sugar.

  8. Cut each into 6 wedges and separate slightly on baking sheet. Place sheet in refrigerator or freezer while oven preheats. Preheat oven to 425 degrees Fahrenheit.

  9. Bake for about 15-20 minutes or under they are slightly golden.

  10. Remove and cool on pan. Serve warm or transfer to baking rack to cool completely.
