Vegan Banana Bread



3 medium bananas, very ripe

1/3 c. unsweetened applesauce**

½ c. granulated sugar

½ c. brown sugar

1 T. ground flaxseed meal

1 t. pure vanilla extract

1 t. baking soda

¼ t. salt

1.5 c. whole wheat flour

Preheat oven to 350 degrees Fahrenheit. Use olive oil spray in a 4x8 loaf pan and then take a wide piece of parchment and arrange so some hang out of the side (so you can easily pick up loaf out of the pan).

In a small bowl, combine the flaxseed with 3 tablespoons of water and set aside for 5 minutes.

Mash bananas in a large bowl and then add the applesauce and mix together. Add sugars and vanilla and mix. After the flaxseed has been set aside, add the flaxseed mixture and mix.

Sprinkle baking soda and salt over the wet mixture and stir together. Then add the flour and mix until just combined.

Pour into prepared loaf pan and bake in preheated oven for 50-60 minutes until toothpick comes out clean. Cool on the wire rack in the pan for about 15 minutes. Lift the parchment with loaf out of the pan and transfer to a wire rack to finish cooling.

** You could try melted plant-based butter in place of the applesauce.
